
It's a recurrent theme in wine: How do we make wine simpler? Europeans, who have been guzzling the stuff since antiquity, never gave a thought to making wine simple. Until very recently, the great majority of Europeans drank what was at hand; namely, what was local. It couldn't get easier or simpler than that, could it?
