High Steaks Eating

An exercise in matching wine and beef helps guide home cooks to peak flavors

Recession or no, Americans' taste for steak has remained as strong as the Goldman Sachs bonus program. Retail sales of top loin and rib eye steaks were up for the 52-week period ending June 28, compared with the previous year, according to the National Cattlemen's Beef Association.
