For a decade now the name Laurent Gras has been ringing a bell in American food circles, but never as loudly as the names of many of his more-hyped contemporaries. Despite a rigorous background in Michelin-starred restaurants in Europe and stellar restaurants in the United States, Gras, 43, seemed always to be one of those "chefs to keep your eye on.
