Wine Spectator's recent Web site poll (see " Restaurant Wine Service ," Aug. 31) netted some very interesting findings regarding the level and style of wine service in restaurants. The most eye-opening for me was that 84 percent of respondents said they did not want a sommelier to taste a wine before serving it to them.
