The majestic Hudson Valley has over the past several years gained a culinary eminence that has helped make it one of the most enchanting destinations in America. Now, fine establishments such as Valley Restaurant at the Garrison, across from Bear Mountain, Equus at Castle on the Hudson in Tarrytown, and Blue Hill at Stone Barns in Pocantico Hills are joined by two very grand restaurants and one very fine smaller one that add measurably to the valley's cachet.
