No New Rules for Aging

The young woman at the holiday party had a question, one that's asked all the time. How did I know which wines would age? Not just a particular wine, but any wine—this being a subject that gives wine an aura of mystery, one that seems to require some sort of special education or training to comprehend, with only properly credentialed professionals knowing the answer for sure.
