
Willard Look, who in 1917 founded the East Machias Canning Company in Whiting, Maine, lined his cans with parchment to prevent the canned lobster from turning color. Even though modern cans don't pose the same problem, the company continued to hand-pack lobster in parchment-lined cans after Mike Cote bought the company in 2003 and changed its name to Look's Gourmet Food Company.
