Since opening Chez Panisse in Berkeley, Calif., in 1971, Alice Waters has refined and spread her ethos of serving the freshest local, organic produce. While other fine-dining destinations were emulating Michelin three-stars, Waters dreamed up a Provençal grandmother's dining room, with Southern Rhône wines to match.
