Wolfgang Puck made his name with California cuisine. At Spago, the Beverly Hills home base of his restaurant empire, the menu sings a lilting tune of salads, vegetables and lightly grilled foods. A few blocks and a world away is Cut, Puck's new steak house in the Regent Beverly Wilshire, which unabashedly revels in fat.
