Emeril's take on the Vegas steak house puts wine front and center

When Emeril Lagasse opened Delmonico Steakhouse, his second Las Vegas restaurant, in 1999, wine director Kevin Vogt envisioned a wine list with 600 to 800 selections. But that soon proved inadequate. "I couldn't keep the good stuff in stock," Vogt says.
