When Bill Hatcher was general manager of Domaine Drouhin, the Burgundy family's high-profile Oregon estate, he had a lavish châteaulike building at his disposal for wining and dining visiting VIPs. But he preferred, whenever possible, to cook dinner at his home, about a mile down Archery Summit Road.
