Salmon is plentiful and versatile, and wild varieties usually have the best flavor
First the good news: Salmon is everywhere. Now the bad news: Salmon is everywhere. Thanks to aqua farming, salmon is the new chicken. Unfortunately, most of it also tastes like so much industrial chicken—insipid and soulless.
