Water, Water Everywhere

Spring, mineral and other bottled waters explained

Soon after sommelier André Compeyre has offered guests at New York's Alain Ducasse at the Essex House an aperitif from the Champagne trolley, another cart arrives. This one contains six different bottled waters -- three still, three sparkling -- from which customers may choose.
