What is "sous bois"?

"Sous bois" is a French term that refers to a forest-floor or undergrowth note. Sous bois suggests something more than just a pile of dried leaves; there's a vegetative, mushroomy quality as well. I've most commonly seen it used by French wine lovers to describe Burgundy.
