Dear Dr. Vinny,
At what temperature should Sauternes be served?
—Eugene K., Houston
I think Sauternes (the renowned dessert wine of Bordeaux) is most expressive at cellar temperature, about 55 degrees F. If it’s served too cold, it might seem shut down. If it’s served too warm, it might seem flabby.
