
Tasting Beat: Guest blogger
My name is Dana D'Anzi and I am the chef de cuisine at Delmonico Steakhouse in Las Vegas. I was born and raised in New Orleans and I've worked for chef Emeril Lagasse, whose company owns Delmonico, for more than 13 years. After earning a bachelor's degree in food service management from Johnson & Wales University in Providence, R. I., I began my career as a line cook at NOLA in New Orleans, another member of the Lagasse "family."
I eventually worked my way up through the ranks, from line cook to sous chef to pastry chef to the place I'm at now, overseeing all aspects of the kitchen, including an extensive dry-aged beef program, at Emeril's largest restaurant to date. I consider the restaurant to be my home away from home, and I look forward to welcoming you to it.
