Food and wine today are more complex than ever before, and so are the variables associated with pairing them. Suggested wines are meant to represent the middle of the road for that type in terms of style and weight. Some wine types, such as California Chardonnay, are made in a wide range of styles and weights. A full-bodied, oaky Chardonnay is unlikely to go with the same foods as one made in a lighter, more austere style.
